Ingredients for corned beef hash.
  • Corned Beef - canned corned beef is best for this recipe. Simply dice into cubes.
  • Potatoes - use a white floury potato such as Maris Piper. You'll need to peel, dice and boil the potato before frying it in the pan. You could use leftover parmentier potatoes instead as they are a similar shape and size.
  • Onion - chopped finely.
  • Garlic - adds flavour.
  • Oil - olive oil or vegetable oil can be used.
  • Worcestershire Sauce - adds a distinch savoury flavour to the dish.
  • Eggs - I've adapted an old family recipe that served fried or poached eggs on top of the corned beef hash, to actually incorporate the eggs into the frying pan!
  • Parsley - adds a bit of colour but is completely optional!
  • Salt and Pepper - for seasoning.

🔪 How to make corned beef hash

One: Place the diced potatoes in a large pan of salted water and bring to the boil. Cook for 6-8 minutes until the potato cubes are tender and cooked (test with a sharp knife). Drain the potatoes in a colander and set aside to steam dry.

Two: Heat the oil in large frying pan and cook the onion and garlic over a medium heat until soft and translucent. Stir in the Worcestershire sauce.

Steps 1 and 2 of making the corned beef hash.

Three: Turn the heat up to medium high and add the potatoes, diced corned beef, and press down with a spatular or potato masher so you have one layer. Cook for 5 minutes until crispy. Use a spatula to turn the hash over in segments and cook for a further 3 minutes.

Four: Make 4 wells in the frying pan using a spoon, and break an egg into each well. Place a lid over the pan and cook the hash for a further 3-4 minutes until the egg is cooked (runny yolk is best!). Season with salt and pepper before serving (and sprinkle with chopped parsley if you like).

💡 Pro Tip: If you don't have a lid for your frying pan, just pop the pan under the grill for a minute to ensure the eggs are cooked on top.

  • Make sure the potatoes are completely dry before adding them to the frying pan, to ensure they crisp up nicely. You'll need to let them steam dry in a colander for at least 5 minutes!
  • Use a non stick frying pan or cast iron skillet to cook the hash.
